How to Make It

Make green goddess dressing

Blend 1 avocado, tarragon, chives, basil, parsley, lemon juice, garlic, olive oil, and a splash of water until completely smooth and vibrantly green.

Prep the vegetables

Tear lettuce into generous pieces. Slice cucumber thinly. Split snap peas lengthways. Cube remaining avocados and toss in lemon juice.

Blanch snap peas (optional)

30 seconds in boiling water, ice bath immediately. This brightens their colour while keeping them crisp. Or serve raw for maximum crunch.

Dress generously

Pour green goddess dressing over everything. Toss gently. The dressing should coat every leaf. Serve immediately — avocado-based dressings oxidise quickly.
